Whole 30 weekday dinners are my fav! đŸ™‚ This one is SO SO easy, its one of my favs! Baking casseroles are the easy way to balance taste with some healthy ingredients without much effort!

INGREDIENTS
1 lb Cauliflower florets (or 1 Cauliflower head)
1 cup frozen Peppers
1 Egg
2 tbsp Butter
1 tbsp Parsley
Salt & Pepper
1 cup Greek Yogurt
2 tbsp Minced Garlic
1 tbsp Red Chilli powder
1 cup Mozzarella cheese (shredded)
Bread Crumbs (optional)
SIDE
Cucumber
Sesame seeds
DIRECTIONS
Preheat the oven to 425F
ROAST VEGGIES
Lay out the cauliflower florets & Pepper slices on a baking pan
Sprinkle salt, pepper & red chilli poweder
Place the pan in the oven for 30 mins
Take it out and let it cool
CASSEROLE
Take all the ingredients (except vegetables) in a large mixing bowl
Mix it all with a hand mixer
Add the roasted vegetables with the marinade
Squeeze the vegetable mix with your hands
Take a baking dish and line it with light olive oil
Layer the above mix in the baking dish
Sprinkle a thin layer of Bread Crumbs
Place it in the oven for 25-35 mins
Bring it out and let it cool
Serve with a side of Cucumber Zoodles !!!
