So, here’s a variation of the Chocolate Macaroons recipe I made a few weeks ago – I decided to use some remaining ingredients I had to make healthy cookies! Keeping this Keto & Gluten free for ya’ll to indulge in 🙂

INGREDIENTS
1 cup shredded Coconut
1/2 cup Coconut flour
1/3 cup maple syrup (+ some if you like it sweeter)
2 tbsp Peanut Butter
1/2 cup Coconut Milk
1/2 cup Chocolate Chip cookies
1 Banana
1 Egg (beaten)
2 tbsp coconut oil (or ghee)
1/2 tbsp vanilla extract
DIRECTIONS
Preheat the oven to 425F
Mix ALL the above ingredients in a large mixing bowl
Use your hands (if you don’t have a fancy blender) to fully mix this into a dough
Using an ice cream scoop, scoop out the dough into your palm
Roll it in between your palms to make a ball
Flatten the ball into a cookie shape
Use a fork to make a cross-hatch pattern
Take a baking pan, spray it with olive oil lightly
Place the cookies on the baking pan
Place in the oven for 25 mins
Bring it out and serve warm!
It will seriously blow your mind!
