Chocolate Coconut Macaroons

My friends and I were video-conferencing over Zoom and decided it’d be fun to “bake together”, virtually! Although we’d planned on it for a week and had chosen our recipes, we didn’t have the ability to actually go out and get all the ingredients we need – due to Shelter in Place. So we took it up as a challenge and decided to get creative!

I chose to bake my own hacked version of Coconut Macaroons – except I didn’t have condensed milk, I only had 2/3 cup of shredded coconut, no chocolate chips.. well it was looking impossible! That said, I did fine some leftover coconut milk, Hershey’s Raw Cocoa powder and an egg.. believe me I was totally winging it, but it turned out DELISHHHHHH!!!!

And they are Gluten Free, Paleo & Keto friendly, how about that!!

INGREDIENTS

1 cup shredded coconut
1/2 cup coconut flour
1/3 cup maple syrup (+ some if you like it sweeter)
1/2 cup raw cacao powder (+ some if you like a rich dark chocolate taste)
2 tbsp Peanut Butter
4 tbsp Coconut Milk
1 Egg (beaten)
2 tbsp coconut oil (or ghee)
1/2 tbsp vanilla extract

DIRECTION

Preheat the oven to 350F
Mix ALL the above ingredients in a large mixing bowl
Use your hands (if you don’t have a fancy blender) to fully mix this into a dough
Using an ice cream scoop, scoop out the dough into your palm
Roll it in between your palms to make a ball
Put the ball back in the scoop and flatten the top so it resembles a half dome

Take a baking pan, spray it with olive oil lightly
Place the half domes on the baking pan
Place in the oven for 25 mins

Bring it out and serve warm!
It will seriously blow your mind!
