I’m becoming such a fan of Cauliflower – I’m starting to use it in everything I can think of! I love how versatile this vegetable is and I’m learning that I can actually make the unhealthiest of meals aka Pizza 🍕 into a delicious Paleo, Gluten free (option), Low carb meal!
I’m going to make the crust with cauliflower and layer on my homemade pesto along with some store bought burrata and basil or mint! I can promise you this one is freakin DELICIOUS! I absolutely love love loved how this turned out, and my hubby and I killed it in less than 10 mins! Believe me – this is SO worth a try!

INGREDIENTS
1 bag of riced cauliflower (1 lb)
1/2 cup Parmesan (shredded)
1 egg (beaten)
Salt & Pepper
Topping
1/3 cup Pesto sauce
Burrata cheese
10-12 Basil or Mint leaves
DIRECTIONS
Preheat the oven to 400F
CRUST
Place the riced cauliflower from the bag into a bowl, cover it and microwave it for 5 mins till it turns soft / mushy
Transfer the microwaved cauliflower rice into a ziplock bag (with a hole) or a strainer
Squeeze out as much moisture as you can
Place the drained cauliflower rice in a large bowl
Add the parmesan cheese, beaten egg and salt & pepper
Mix everything together into a dough (with your hands)
Take a round baking dish (~9″) , or a baking pan
Put the dough into the pan in a “round” shape (its easier if you use a round dish)
Bake in oven for 25-30 mins until the crust turns golden brown
Bring it out and let it cool for 10 mins
TOPPING
Once cooled, layer on pesto (you can check my homemade pesto recipe)
Add blobs of Burrata and top with mint or basil leaves
