Lettuce Wraps (PF Chang’s Style) – Instant Pot

So, this one has been on my list since forever! I absolutely LOVEEEE chicken lettuce wraps and end up binging on them, except they are always served as appetizers and I’d want to make a meal out of them alone! So, I hunted down several recipes online and mixed and tweaked as I always do to suit my taste. It is Keto friendly and the perfect source of healthy protein with really no carbs at all. Which means, you can bing on it, guilt free!

I also decided to make this Vegan so everyone can enjoy this, but know that this recipe can easily be substituted for any other meat! I decided to use the Beyond Beef vegan meat from Whole Foods 🙂

INGREDIENTS

2 tbsp olive oil / ghee
2 patties of Impossible meat / Beyond Beef
(can easily substitute with 0.5 – 1lb chicken)
1 tbsp minced garlic
1/10 cup Hoisin sauce
1 tsp red wine vinegar
1 tsp soy sauce
2 tsp Chipotle Mayo
1 tbsp Chilli oil
1-2 spoonful of grated coconut
5 green onions chopped
1 onion
2 green chillies
1 tsp red chilli powder
Salt & Pepper
1 cup peanuts

DIRECTIONS

Turn on instant pot to Sautee
Heat oil in the instant pot
Add the chopped onions and let sauté for 5-7 mins until nicely browned
Add garlic and sauté another min
Add impossible meat to the pot along with salt, pepper, hoisin sauce, green chillies, red chilli powder, red wine vinegar, soy sauce, chipotle mayo and chilli oil
Pressure cook on high for 2 mins
Release the pressure after a few mins and open up to a juicy mulch of cooked meat soaking in the mixture of sauces

In a pan, roast the peanuts.
Run the roasted peanuts in a chopper till they peanuts are broken into smaller crunchy pieces
Add the grated coconuts & peanuts to the mix in the pot
Sauté for another 2 mins till the sauces dry out And you have the perfect fillings

Get a few fresh heads of lettuce, add the filling and serve with 2 spoons of filling in each lettuce wrap !
